The Wild Nettle method

How to make an infusion

An infusion is not a cup of tea. It is a litre jar, a full cup of dried herb, boiling water, and hours on the counter rather than minutes in a mug — long enough to draw the minerals out of the leaf. It is how every herb on this shelf is meant to be drunk.

What you will need

  • A 1-litre glass jar with a lid
  • A measuring cup or scoop
  • A sieve or cheesecloth
  • Boiling water
  • A metal spoon
  • Your dried herb
  • Patience

  1. Warm the jar

    Pour a little boiled water in, swirl it around, and tip it out, so the glass is not cold when the full kettle hits it.

  2. Measure the herb

    Roughly 28 g — about one cup — of dried herb into the jar. Half a cup is a gentler start if infusions are new to you, and where a herb gives its own measure in its suggested use, as hibiscus does, follow that.

  3. Fill with boiling water

    Right to the top. Stir with a metal spoon to chase out the air bubbles, then put the lid on.

  4. Leave it on the counter

    Four hours at the least, nine at the most. Setting it up before bed and straining it in the morning is the easiest rhythm to keep.

  5. Strain

    Through the sieve or cheesecloth — into a second litre jar if you have one, lid on, and it is ready to pour from.

  6. Drink, or chill

    As it is, gently reheated, or straight into the fridge. Once refrigerated, drink it within two days.

  7. Give the rest back

    An infusion past its two days makes a good hair rinse, or feed it to your plants. The spent herb goes into the soil or the compost — reciprocity, as Wild Nettle put it.

Consistency is key

Wild Nettle recommend a litre a day. Over time you may notice fewer cravings, steadier energy and a clearer head. Infusions are safe for the whole family — treat them as an iced tea without the calories.

New flavours

The earthy bitterness is the point: bitter tastes wake the digestion and are worth learning to like. Honey or a sprig of mint will soften a cup while you get there.

There are no rules. Enjoy the ritual of it, and learn to listen for which herb your body is asking for, and how much.
